THE MEANING OD CLEANING AND SANITIZING

CLEANING
  • Cleaning means is to remove soil and food reduce from surface equipment and utensil.

SANITIZING
  • Sanitizing mean is treatment of a surface that has been previously clean, reduce the number of disease microorganism to safe level.

FOUR EFFECTIVE CLEANING
  1. Detergent of other type of cleaner is brought into contact with the soil.
  2. The soil is loosened from the surface being cleaned.
  3. The loosened soil is dispersed in the wash water.
  4. The dispersed soil is rinsed away along with the detergent to prevent it from being redeposit onto the clean surface.
FACTOR AFFECT CLEANING EFFICIENCY

  • types of soil to removed
  • water quality
  • the detergent or cleaner to be used
  • water temperature
  • the concentration of cleaner
  • amount of time the detergent remains in contacts with the surface
MECHANICAL DISH WASHING PROCESS

  1. Pre scrape and pre flus soiled equipment and presoak utensils to remove visible soil
  2. Rack equipment and utensils so the wash and rinse waters will spray evenly on all surfaces and the equipment will freely drains.
  3. Wash equipment and utensils in clean water at a temperature consistent.
  4. Air dry equipment and utensils.
  5. Store clean and sanitary items in a clean, dry are where they are protected from contamination.
CLEANING PRODUCTS

  • Soap 
  • Alkaline detergent
  • Acid 
  • Degreaser 
  • Abrasive
SANITIZING PRODUCTS

There are 2 types of sanitizers it is Heat and Chemicals

Heat Sanitizing
  •  can penetrate small cracks and crevices
  •  leaves no residue 
  •  easily measurable
Chemical Sanitizing
  • An object sanitizing solution by swabbing, brushing or pressure spraying a sanitizing solution directly on surface to be sanitized.
CHEMICAL SANITIZING
  1. Chlorine - chemical component of hypochlorines
  2. Iodine - commonly used called iodophors
  3. Quats - ammonia salts used as chemical sanitizers but do not destroy wide variety of germ.
