SALAD - WEEK 9


Salads have three categories such as:

1.       Green Salad
Ø  Mild Green
Ø  Bitter Green
Ø  Spicy Green
Ø  Prepared of mix Green
Ø  Herbs & Micro Green

2.       Side salad
Ø  Vegetable Salad
Ø  Potato Salad
Ø  Pasta & Grain Salad
Ø  Legume Salad
Ø  Fruits Salad

3.       Composed Salad
Ø  Are made carefully arranging items on the plate rather than tossing them on the plate.

CAESAR SALAD

Ingredient
Ä  Romaine Lettuce
Ä  Parmesan Cheese
Ä  Crouton

Dressing
v  Egg yolk
v  Oil
v  Anchovy
v  Garlic
v  Parmesan Cheese
v  Salt & Pepper

Method
1)     Mix egg yolk, oil, garlic and lemon to made the dressing
2)     Also mix the parmesan cheese and anchovy
3)     Bake the crouton with a little oil and garlic
4)     After that, mix the dressing with the romaine lettuce
5)     Put at the plate and put the crouton and garnish with your own creativity  
6)     Done 

GREEN SALAD

Ingredient
Ä  Coral Salad
Ä  Cucumber
Ä  Onion
Ä  Carrot

Dressing
v  Olive Oil
v  Vinegar
v  Lemon
v  Parsley
v  Garlic
v  Basil
v  Oregano

Method
1)     Mix together olive oil, vinegar, basil, oregano and garlic to made vinaigrette for dressing
2)     Cut the cucumber into cube, onion into ring and using grater to cut the carrot
3)     Put the coral salad, cucumber, carrot, onion into the plate and put the vinaigrette
4)     Garnish with your own creativity
5)     Done

BEEF SALAD

Ingredient
Ä  Coral Salad
Ä  Beef

Dressing
v  Olive Oil
v  Vinegar
v  Salt & Pepper

Method
1)     Mix to together olive oil and vinegar and add salt & pepper to seasoning for made vinaigrette using for dressing
2)     Cook the beef until cooked
3)     Put the coral salad into the plate and beef also
4)     Garnish with your own creativity
5)     Done
