INTERNATIONAL CUISINE - WEEK 9 (SPAIN CUISINE)


INTRODUCTION
Introduction Spain Cuisine
-       In week 9, we have to cover chapter 9 that is Spain cuisine. The cuisine that we learn is stew shrimp with rice that from Spain. Other than that, we was cooking beef burger and chicken chop with fries was sell in the college that is to many student and lecturer buy that.
History of Spain Cuisine
-       Spanish food history may be among the most varied and interesting in the world. Since before the Romans the Iberian Peninsular has received influence from many cultures and regions and its gastronomy has evolved along with each century, each invasion and each conquest. Even today, Spanish cuisine is still evolving and continues to be one of the forerunners in the promotion of the healthy Mediterranean diet.
The Romans contributed with olive oil and wine, the Arabs with different gazpachos, irrigation systems, almonds and many other popular and nowadays common products, the ollas we know today would not have been possible without their Sabbath celebration and specific preparation method, and one of Spain's star product, ham, would not be among the best in the world if it wasn't for Christians.
The Mediterranean diet is known for being as tasty as it is healthy, and the fact is this is largely in part to the natural produce cultivated and harvested in the region. However many of the ingredients now central to many of the typical Spanish dishes were not even heard of over 500 years ago, we're talking about the popular and versatile potatoes, tomatoes, peppers and cocoa, all of them were brought from America upon its discovery.
Cocoas in particular is just one of those ingredients that has changed eating habits across the world. Where would we be without chocolate? It is thanks to the Spanish sweet tooth that this treat became so popular across the world. Plus they even combined it with other ingredients to givev us such delight as chocolate con churros - a favourite in the city of Madrid.
But Spanish food has evolved a lot since 1492, here at Spanish Food you can learn about its differents stages since the year Spain became Spain, that is, the year of the reconquest, when it was unified once again and most of the American countries became Spain's colonies. So many of the ingredients that we now take for granted actually came into our gastronomies thanks to the explorations of the Spanish. Tomatoes, potatoes and many other products are just some of the things brought back from the Americas.
Spain naturally has a rich agricultural heritage of all manner of ingredients as well. In particular, it is one of the world's largest producers of grapes and olives. Both of these products are used to produce some of Spain's other signature items: wine and olive oil. Both of these products are now protected by various Designations of Origin.
CONTENT
Ingredients for beef burger 

·         2kg minced beef
·         2nos egg
·         5tbsp bread crumb
·         10g chop onion
·         10g chop garlic
·         3g salt
·         3g Black pepper
·         10g tomato sauce
·         60g butter
·         Plain bun

Method
1.    Add the beef to a mixing bowl and break up with your fingers.
2.    Tip in the garlic and onion into the mixing bowl
3.    Add salt and pepper and the bread crumb
4.    Pour in the egg and ensure that it has been mixed right the way through the beef and onions.
5.    Separate the mixture into portions and start molding using your hands into burgers. Create a depression in the centre, this will ensure the burgers cook evenly and flat. Place in the fridge to chilled and stiffen.
6.    Once chilled and with the barbeque lit and the coals simmered down, place the burgers on the BBQ.
7.    Ensure that each side has sealed, if not they'll fall apart when you lift them off. Turn them over until cooked through or to the desired pinkness in the centre. Put the plain bun and serve.
Recipe: Chicken chops with fries 


Chicken chop
·         Chicken thigh (300g)
·         Salt & Pepper
·         Chicken stock powder (1tsp)
·         Sweet soy sauce (10ml)
·         Paprika (1tsp)
Fries
·         Potato (80g)
·         Garlic  (10g)
·         Onion (10g)
·         Starch  (100g)
Sauce
·         Mayonnaise (100ml)
·         Paprika (1tsp)
·         Jalapeno (10ml)
METHOD
1.    First, debone the chicken thigh and marinate with chicken stock powder, sweet soy sauce, salt and pepper, paprika. Set aside.
2.    For the fries cut the potato into batonnet and put in the bowls that have water and salt. After that, put the garlic, onion and starch and then deep fry until cooking.
3.     For the sauce put mayonnaise, paprika and jalapeno into bowl and then mix together
4.    Grill the chicken into the grilled, cook until cooked.
5.    Garnish and can serve.

RECIPE STEW SHRIMP WITH RICE 

Ingredient
Ä  1/3 cup vegetable oil
Ä  ½ cup all purpose flour
Ä  1 large onion diced
Ä  1 cup small ,peeled shrimp
Ä  3 cups water
Ä  2 tablespoon finely chopped green bell pepper
Ä  2 tablespoon minced celery
Ä  1 tablespoon chopped fresh parsley
Ä  ½  teaspoon salt
Ä  ¼ tablespoon ground black pepper
Method
  1. Make the Roux: In a heavy bottomed sauce pan, over medium heat, heat oil until hot but not smoking. Add flour all at once and stir constantly until the roux is golden brown. (Note: do not cook the roux too fast. If black flecks appear, the roux is burned and you must discard and start over. It may take 45 minutes to 1 hour to make the roux. The end result is worth the time.)
  2. Add the onion to the roux and cook, stirring constantly, until onion is soft and light brown.
  3. Lower heat to simmer and add the shrimp and cook for about 10 minutes. Slowly stir in the water. Raise heat to medium and continue cooking until the stew reaches a boil. Stir in the green bell pepper, celery, parsley, salt and pepper.
  4. Turn heat down to a simmer and cook for about 30 to 40 minutes to blend flavors. Taste and adjust seasonings
