ASSIGNMENT 1 - GARDE MANGER



GREEN SALAD

-          green salad is a salad made mainly with lettuce and other green vegetables.

1. Mild Green
Ä  Using mild lettuce to make the mild green salad.
2. Bitter Green
Ä  Mixed green leaves of a variety of salad vegetables with a bitter taste, such as endives, chicory, or spinach.
3. Spicy Green
Ä  This is a spicy salad but that does not mean it has the numbing, fiery heat that takes away from the flavour of the vegetables
4. Herbs & Flour Micro Green
Ä  Micro greens with grated carrots, cubed avocado, raw sunflower seeds, topped with a little lemon juice and olive oil and a soft poached egg on the side.

SIDE SALAD
-          side salad is a bowl of salad for one person which is served with a main meal.
1. Vegetable Salad
Ä  Any salad consisting of vegetables, such as cabbagecarrotsbeans, etc, not usually included in a green salad.
2. Potato Salad
Ä  A salad made with potatoes, mayonnaise, eggs and some vegetables.
3. Pasta & Grain Salad
Ä   A salad dish prepared with one or more types of pasta, usually chilled, and most often tossed in a vinegaroil, or mayonnaise-based dressing.
4. Legume Salad
Ä  Turn dried or canned beans, lentils and chickpeas into flavourful salads that will add a healthy boost to your meals. Perfect year round, these fibre-rich salads are a great way of incorporating legumes into your diet.
5. Fruits Salad
Ä  Fruits Salad is a dish consisting of various kinds of fruit, sometimes served in a liquid, either in their own juices or syrup.

COMPOSED SALAD

-          Are made by carefully arranging items on the plate rather than tossing them on the plate.
